Ingredients
- ¾ cup hummus
- ¼ cup scallions
- 4 count whole wheat tortillas
- 1 ½ cups fresh baby spinach
- 1 cup baked sweet potato - no skin
- ¼ cup red bell pepper
- 2 tbsp sunflower kernels

Bake Sweet Potatoes for 40 min (205 degrees) in a covered dish 350 degrees in the oven

Mix hummus and scallions.
