Smoked Beef Brisket V2

A methodical approach to smoking the perfect brisket. Smoked low at 225°F to build bark, then wrapped in butcher paper to push through the stall. Finished at a slightly higher temp for tenderness. Requires patience and careful temperature monitoring.
