  • 3 lbs chicken thighs
  • 3 packets taco seasoning
  • 2 cups red enchilada sauce
  • 2.33 cups frozen corn
  • 1 can black beans
  • 2.5 cups jasmine rice
  • 1.75 cups Greek yogurt
  • 2 tbsp lime juice
  • 3 count chipotle peppers
